1.2 Carb Creamed Spinach Chicken Casserole!

Dear Diary,

I am going to try, "Low Carb Creamed Spinach Chicken Casserole!"



Ingredients:
1/2 diced yellow onion
1/2 tbs olive oil
1 thawed out package of chopped spinach
1/4 cup of creamy pesto cooking creme (made by Philadelphia Cream Cheese)
1 diced garlic clove
1/2 cup mozzarella cheese
1/4 cup of bacon bits
2 chicken breasts pounded and cut into two medium sized pieces
1/2 cup of Marsala Wine

Preheat the oven at 450.

1.Put the olive oil in the pan, then saute the yellow onion until they are soft and browned.
2.Throw in the spinach and garlic for about 1 minute.
3. Add the cream cheese, 1/4 cup mozzarella and bacon bits and mix till the mixture gets thick.
4. Take the chicken pieces and fill them with the mixture and roll them up and lay them on their bellies next to each other in a non-stick casserole dish.
5. Take the left over mixture and the Marsala and mix it together on high to make a sauce.
6. Take the sauce and spread it all over the chicken.
7. Top if off with the remaining mozzarella cheese.
8. Stick it the oven for 18 minutes.
9. Let it rest for 5 minutes.
10. Serve with your favorite side dish.

*I hope you like this recipe. I came up with it last night before dinner. I wanted creamed spinach, but knew I couldnt have the butter or the REAL cream that was normally in it, so I had to be creative.

This dish is 1.2 carbs per serving and there are 4 servings~
